Figuring out what to make for dinner can be challenging. When I’m out of ideas, I rely on easy meals like skillet recipes to help me get things done in a flash. These delicious weeknight dinners are loaded with veggies, plus they come in one pan and make cleanup a breeze.

We know that vegetables are good for us, but sometimes it can be difficult to figure out how to include them in our daily meals. For me, the easiest way to make sure I’m eating enough veggies is to make main dishes with them, like these weeks of veggie skillet dinners.


Friday Chicken Nachos are a fun idea for Friday night dinner, especially if you plan to stay home and watch a movie on the couch like I do. This recipe includes some ready-to-use ingredients such as shredded cooked chicken, corn tortillas, and canned black beans that make it easy to prepare. Vegetables such as tomatoes, red onions, cilantro, and jalapeño peppers are packed with flavor and healthful nutrients like fiber, vitamins, and minerals. Not to mention, my favorite ingredient, avocados, provide heart-healthy fats and the carotenoid type lutein, which supports your brain health.


Sunday: Garlic-soy chicken and vegetables with a side of quinoa
Monday:
Roasted gnocchi and Brussels sprouts with Meyer lemon vinaigrette
Tuesday:
Salmon with sweet potatoes and broccoli
Wednesday:
Pork and cherry tomatoes with a side of quinoa

I’m looking forward to this weekend because my in-laws are visiting and celebrating my father-in-law’s birthday. And what better way than with this refreshing gin and blackberry spritz toast. What I love about this cocktail is that it looks fancy and festive, but it’s only made with four ingredients. If you are not into gin, you can easily replace it with vodka.

Bananas are always on my shopping list. And even though my husband eats one every morning, sometimes I imagine we’ll eat more than we actually do. Whenever I have super ripe bananas in the kitchen, I usually peel them and freeze them for our smoothies. Our editorial student Emma Saadi shared her banana bread recipe that she likes when the bananas are overripe. Not only does this recipe look absolutely delicious, but it’s full of fall flavors that are perfect for the season.
